美しい和菓子

皆さま、いかがお過ごしでしょうか。日本では、10月は全国の神様が出雲大社に集まるため「神無月」と呼ばれますが、出雲地方だけは「神在月」と呼びばれています。実りの秋、そして爽やかな秋晴れ「天高く馬もヒトも肥える秋」ですね。この月は秋の味覚や楽しい行事が満載!夏のエネルギーが落ち着き、自然の恵みに感謝しながら、一歩ずつ冬の準備を進める静かで豊かな季節「秋」。日本の「和菓子と新茶」、英国の「温かい紅茶とスコーンやアップルクランブル」といった、まずは、秋の味覚を楽しむテイータイムのお話です。五感で楽しむ秋の「和菓子」は10月になると、和菓子屋さんの店頭には栗や柿、紅葉、十三夜の月をモチーフにした、目にも鮮やかなお菓子が並びます。

練り切り

職人の技が光る繊細な「練り切り」は、まさに食べる芸術品ですね。ロンドンでもその和菓子を源吉兆庵さんで手に入れられるのは嬉しいですね。そして秋を彩るお茶、一般的に「新茶」といえば春(5月)をイメージしますが、実は秋にも「蔵出し茶(秋の新茶)」と呼ばれる、春に摘んだ茶葉を夏の間じっくりと熟成させたお茶が出回ります。角が取れまろやかでコクの深いお茶は上品な甘さの和菓子の絶妙なパートナーですね。やはり、日本人に生まれてよかったと実感する至福の瞬間です。 

 さて、英国に目を向けると、冬時間が10月25日からスタートですね。日が短くなり、肌寒さが増す英国の10月。家の中で暖かく過ごす「コージー(Cozy)」な時間を何よりも大切にする英国人にとって、淹れたての紅茶とほんのり温かいスコーン。それを半分に割り、濃厚なクロテッドクリームと甘酸っぱいジャムをたっぷりのせていただく「クリームティー」は、秋冷えの体を芯からほっこりと温めてくれますがウエストラインも一緒にぼっこりするのが気がかりですね。  スコーンのレシピ                      

そして何と言っても英国の秋の定番はクランブル(小麦粉、バター、砂糖を混ぜてそぼろ状にしたもの)のサクサクの食感と、シナモンを効かせてクツクツ煮た甘酸っぱいリンゴの組み合わせがたまりません!アツアツのクランブルの上に温かい「カスタード」をとろっと贅沢にまわしかけて食べるのが英国流。 濃厚なミルクティー(ブレックファストティーなど)との相性は抜群です。カロリーの事はこの際忘れて堪能しましょう。

そして個人的には、この秋で私のウエイトトレーニングも3年を迎え、石の上にも3年、継続は力なりなのか、少しずつ足が地面に付きエネルギーを感じることができるようになりました。最近のトレーニング動画です。トレーナーさんのYouTubeからもご覧いただけます。筋肉は何才からでも付くを信じて~~。

さて食から自然に目を向けると、日本の紅葉といえば鮮やかな「赤」が目に浮かびますが、イギリスの秋の木々は、どこかノスタルジックなgolden(黄金色)のグラデーションが印象的です。赤く燃える日本の秋と、「オーク(ナラ)」や「ブナ(Beech)」、「マロニエ(トチノキ)」の葉が黄金色に輝く英国の秋。色彩は違っても、木々が魅せる一瞬の美しさに心を動かされるのは世界共通ですね。どうぞ、暖かくして、実り多き秋となりますように!

    Izumo Taisha Shrine

    Hope everyone is well. In Japan, October is called “Kannazuki” (the month without gods) because all the gods from across the country gather at Izumo Taisha Shrine, in contrast, in the Izumo region, it’s called “Kamiarizuki” (the month with gods). It’s the season of harvest and refreshing autumn weather—”the sky is high and both horses and people grow fat in autumn.” This month is full of autumn flavors and fun events!

    Autumn is a quiet and abundant season when the energy of summer settles down, and we prepare for winter step by step while giving thanks for nature’s bounty. First, let’s talk about teatime to enjoy the flavors of autumn, such as “Wagashi (Japanese sweet) and Shin-cha (new tea)” in Japan, or “warm tea and scones or apple crumble” in the UK. As October approaches, wagashi shops are filled with visually stunning sweets that appeal to all five senses, featuring motifs of chestnuts, persimmons, autumn leaves, and the thirteenth night moon. The delicate “nerikiri,” showcasing the craftsmanship of artisans, is truly edible art. It’s wonderful that you can get these wagashi in London at Kichoan.

    As for the tea, which adds color to autumn. While “Shin-cha (new tea)” generally brings to mind spring (May), in fact, in autumn, there’s also “kuradashi-cha” (autumn new tea), made from tea leaves picked in spring and carefully aged throughout the summer. This mellow, deeply flavorful tea is an exquisite partner to the elegant sweetness of Japanese confectionery. It’s a blissful moment that makes me think, “So glad I was born Japanese!”

    Turning our attention to the UK, winter time starts on October 25th. October in the UK brings shorter days and increasing chills. For Britons, who cherish cozy time spent warmly indoors, freshly brewed tea and slightly warm scones—split in half and topped with rich clotted cream and plenty of sweet and sour jam—make for a “cream tea.” It warms you to the core on a chilly autumn day, but the bulging waistline is a concern, isn’t it? You can try this scone recipe if you fancy. And of course, the quint essential British autumn treat is the combination of the crispy texture of crumble (a mixture of flour, butter, and sugar) and the sweet and sour apples simmered with cinnamon! The British way to enjoy it is to generously pour warm custard over the hot crumble. It pairs perfectly with rich milk tea (such as breakfast tea). Let’s forget about calories for now and just enjoy it!

    Personally, this autumn marks my third year of weight training, and as the proverb goes, perseverance pays off, I’m starting to feel my feet on the ground and gaining energy.     Now, shifting our focus from food to nature, while Japan’s autumn foliage evokes images of vibrant red, the trees of England in autumn present a striking, somewhat nostalgic golden gradient. The fiery red of Japan’s autumn versus the golden hues of oak, beech, and horse chestnut leaves in England—though the colors differ, the fleeting beauty of the trees is universally captivating. May you all enjoy a warm and fruitful autumn!
